SND - Salmon and Ratatouille

After a relaxing day enjoying the beautiful weather, Andrew and I headed down to Jen and Evan’s for dinner. We didn’t know what we were having, but in my head I was secretly hoping for something cooked on the grill because it was a perfect day for grilling.

We walked in the door and in the kitchen Jen and Evan were pondering the best way to cook a very large, very beautiful piece of salmon. Taking a page from Andrew’s parents, we told them to season it and wrap it in a pocket of aluminum foil and stick it on the grill to poach.

SND - Salmon and Ratatouille

It worked like a charm. The salmon was seasoned with just some olive oil and hearty dash of salt and pepper. It was served with a butter lime sauce and was flaky and flavorful.

I thought we were having salmon and some vegetable for dinner, but then Jen turned a pulled this beauty out of the oven.

Seriously, look at that! Her ratatouille was not only pleasing to look at, but it tasted great too. Apparently the way to eat ratatouille is serve it over couscous with a little bit of goat cheese. You mix the whole thing together and it no longer looks beautiful, but it tastes amazing. The creamy goat cheese mixed with the soft vegetables and the texture of the couscous is so good.
