Hasselback Potatoes(89/366)

I came home today, to find these waiting for me for dinner. Look how pretty they are!

Andrew made us these potatoes this evening. In his words, “They are stuffed with garlic and they are delicious.” This is a true statement. I am particularly partial to the spinach cashew pesto atop them which is quite a lovely shade of green.

Potatoes Out of the Oven

He adapted the recipe from Joy The Baker. Andrew said they were pretty easy to make, but they did take a while (baking potatoes can’t be rushed people). Basically you slice a potato (but not all the way through) a bunch of times. Then you shove some garlic in between the slices. (Andrew was very generous with the garlic. Anyone want some kisses?) Sprinkle it the potatoes with salt, top with a little butter, and drizzle with some olive oil. Bake for an hour at 425°, and baste with the oil and butter every fifteen minutes. You’ll end up with something delightfully delicious.
