Star Cupcakes

I made these lovely little cupcakes for temple this week. I like them because they are so simple to make, yet put a nice twist on a traditional cupcake. The blue icing really pops against the dark chocolate cake. I was quite pleased at how they turned out.

I had a whole bunch of people today as me how I filled these cupcakes. Upon closer inspection, it would have been quite obvious, but at first glance it does seem a little laborious. It’s really quite simple.

You start off by cutting off the top of the cupcake.

Lop off the top

 Then using your favorite mini cookie cutter, cut out the center of the top of the cupcake. I used a star here, mostly because my selection of other small cookie cutters includes candy canes, holly leave, and gingerbread men. Somehow I didn’t think my temple was going to appreciate a Christmas theme. We’re progressive, but I don’t think we’re THAT progressive.

After that, it’s a cinch. Put some icing on the base of the cupcake and smoosh the top back on. If you keep the icing in the center enough, you can hardly tell it’s been cut apart. No problem!
