I’m not sure how it happened, but some how I got swindled into making manicotti for my coworkers. We started talking about it 8 months ago and after being here for 3 months, it finally came to fruition.
I made two kinds – traditional manicotti with ricotta cheese and this weird ground beef and bread filling one. They were both a hit, but I think the beef one was preferred by the very male-heavy crowd we had. Manicotti is such an easy meal to make and it’s always impressive. As you can see from the photo, I think everyone agreed!
