Chicken and Broccoli Stir Fry

We’re on a rice and broccoli plus some kind of protein kick over here. Just the other day I made roasted shrimp and broccoli and tonight it was chicken and broccoli stir fry. I cooked the food, Andrew made the sauce, and we were good to go. I love stir fry because it’s a seemingly healthy meal that’s super easy to make. Basically, you throw a bunch of vegetables (and meat if you want) into a frying pan, stir for fifteen minutes, and you have dinner.

We managed to drive to the grocery store, do our week’s shopping, drive home, unpack the groceries, and cook dinner in just over an hour. How’s that for efficiency!?

Fun cooking tip of the day: My friend Chris taught me a long time ago to coat the pieces of chicken in corn starch before stir frying them. I’m not sure why it works, but it keeps the chicken super moist and tender while cooking.
