We resumed our Sunday night dinners this week and this week we had a special guest! Meri joined us for dinner. I thought she was a vegetarian (turns out she isn’t anymore) so we decided to veer from our usual grilled chicken dinners and came up with something a little different.
Andrew found a recipe for a chickpea casserole online which turned out to be a little underwhelming. However, as a side dish we made a delicious potato salad. This has an oil and lemon juice dressing that was refreshing and bright and the herbs, spinach, and shallots added some interesting flavors and texture to contrast the creamy potatoes.
