Pumpkin Chocolate Chip Cookies

Hey look! I made a seasonally appropriate cookie!

Maybe a week and a half ago, Andrew was absentmindedly musing that he wanted a pumpkin chocolate chip cookie to have with his coffee while he was at work. I told him I would see what I could do…and a week and a half later I finally got around to making them.

In my experience, pumpkin cookies have a tendency to be rather cakey. I always feel like I’m kind of eating the top of a pumpkin muffin. These…they’re a little less cakey and a little more cookie. They’re slightly crispy on the outside and soft on the inside. Andrew inhaled four of them tonight and has already offered to taste test any future batches.

My batch was kind of extra fluffy, but I may have accidentally dumped a little bit extra baking powder into the batter because I wasn’t paying attention..so you’re might be a little flatter. They’re totally delicious though.
