I must admit, when Andrew suggested this recipe for dinner I was a little skeptical. I really wasn’t sure about the whole orange and salmon combo. I’m admittedly, not the hugest fish fan in the first place, but it was something different and Andrew seemed excited about making it, so I went along with it.
I’m glad I did. This was SO good. The orange infused butter plus grilling the salmon over orange slices really infused the fish with a great citrus flavor. It went so well together and was such a nice change of pace from the standard oil, salt, and pepper seasoning. He also grilled asparagus to perfection and made a pesto couscous salad.
