I really wish I could grow things. I have somehow managed to defy the laws of nature and genetics and have inherited The Jackster’s (non)ability to grow…anything. I mean, I’ve killed bamboo! I’m pretty sure all you have to do to keep bamboo alive is give it water every two weeks or so. And somehow I’ve even failed at that. My poor bamboo is now just one pathetic, withering stalk, sadly hanging on for dear life having outlasted it’s less robust comrades. I once broke an orchid in half taking it out of the plastic container protecting the flower. Plants do not like me.

Lucky for me, rarely does anyone ask me to take care of plants for them. I believe I was once asked to take care of a basil plant and I think we can all guess how that turned out. Warning: do not ask me to take care of plants for you if you actually want to have a living plant when you return.

I have a bit more luck with flowers that are…well…not actually alive. This garden cake was for a first birthday and its myriad of flowers and adorable animals is definitely more my garden style. I only wish I could have actual plants this cheery and fun (and alive), but for now I’ll stick to the cake versions. I feel like they can’t help but put a smile on your face!

You see, this cake is supposed to be crooked. I’ve actually made this cake before and The Jackster promptly asked me if I had messed up because it was all tilted. I appreciate the confidence, Mom!

I quite like this cake. It’s fun and pretty and full of whimsy and class (black, white, and pink is just a classy color combo, don’t ya think?).

And I think this is my best piping job so far, if I do say so myself.

Did you have birthday parties as a child? Were they awesome?

I remember I had one birthday party at a craft store and we made these little figures whose bodies were jars that we filled with candy. My little figure had a straw hat, but by far, the best part of it was that it was filled with candy. Have I mentioned I have a bit of a sweet tooth?

But most of my birthday parties were backyard affairs. The Jackster and I would make a box cake, set up some croquet and badminton (ha, what a refined 8-year-old I was!), and always, always, always have a pinata. One time we didn’t have a chance to get a real pinata so my mom took a big green trash bag and filled it with candy. Good enough for me. I mean, it was filled with candy! (About that sweet tooth…)

Well, Ella had a birthday. She turned 4. I don’t actually know Ella, but I know her party was princess themed and that with a name like Ella, how could she not be as cute as can be?

I really liked making this cake. It’s red velvet cake with cream cheese icing. I’m definitely better at smoothing on fondant than I am smoothing on icing, but I really like the overall look of this cake. We all agreed the best way to describe this cake was…whimsical. I mean, just looking at it makes me smile.

Ella, I hope you had a terrific birthday! Enjoy being 4, I remember it being an excellent age!

We’re four nights in, but Happy Hanukkah! Been eating some latkes? Some doughnuts? How about a little dreidel action? No? Well, you’re missing out.

Betsy and I had a little Hanukkah shindig the other day. We got a bunch of friends together, had some food, had some drink, had some good company and a good time.

Of course, I made a cake.

It was pretty simple because I didn’t have much time. Vanilla cake with lemon icing and a blue and white swirl of fondant. A little fondant dreidel and some Hebrew letters topped it off.

Some good friends came down from New York for a visit too.

It was a mini Cornell Gymnastics Club reunion! But what really topped off the night, was this gem of a video they produced.

This cake is black. Like really black. Like the cake batter itself is black, in addition to the icing. It’s kind of morbid. And I think a little unnerving. Better yet, the cake is vanilla flavored and the icing is chocolate. But it’s all black.

Why did I make a black cake may you ask? Because someone asked me to. And, in case you didn’t get it, it’s for a 50th birthday. Terry’s 50th birthday. And it sure is nifty.

Terry is one of my coworkers. Have I mentioned my coworkers are delightful? They are. Plus, they eat just about anything. And anything usually includes many of my baked goods. They are also pretty fond of rather extravagant displays of ridiculousness. So Terry’s birthday was the perfect opportunity to do this:

It looks so festive and fun! But (mostly because we didn’t plan so well) as you dug through the balloons the colors started to fade away until all you could see were black ones. So many black balloons. And because we are engineers, it was calculated just how many balloons were needed to fill that office. The final number was around 500, but we stopped around 375 because we ran out of hot air (ha! not likely!). We then let Terry figure out how to clear out her office.

Oh, and back to the cake (being that this is a food blog and all…). It’s a vanilla cake, with A LOT of black food coloring. I use those little tubs of gel food coloring that you can get at your local craft store. I think the icing had 2.5 tubs of black gel and the batter for the cake had 1 full tub. And the recipe? A cinch.

Vanilla Butter  Cake Recipe

makes 2 10-in cake rounds and 2 6-in cake rounds. It’s a lot of cake.

  • 24 oz unsalted butter
  • 16 oz of granulated sugar
  • 1 1/3 tsp salt
  • 10 eggs
  • 30 oz of all-purpose flour
  • 7 1/2 tsp of baking powder
  • 30 oz of milk
  • 3 tsp vanilla extract

In a large bowl, cream the butter and sugar until fluffy. Add each egg one at time, making sure they are completely mixed in before adding the next. Finally, add the vanilla extract.

In a separate bowl, sift together the flour, salt, and baking powder.

Add the dry ingredients to the wet ingredients in thirds, alternating with the milk and starting and finishing with the dry ingredients. Mix until fully incorporated. If you want to make it some wacky color, now is the time to add the food coloring gel.

Grease and flour 2 10-in pans and 2 6-in pans. Divide the batter amongst the pans.

Bake in a 350Âș oven for 40-50 minutes.

Let cool and remove from pans.

Stack and ice as you please.

Mario Brothers Cake

I’m an engineer. I think that means I’m supposed to like video games. Sad to say though I never played them much. My mom would never let me have video game consoles when I was a kid, so the only time I got to play them was when I went to my friend’s house. My friend and Andrea and I used to play Duck Hunt sitting with that plastic orange gun pressed up against the screen trying to shoot those crazy ducks. Put me two feet from the screen though? I didn’t have a shot (har har).
